Dinner Ideas

Last year I asked what everybody was making for dinner so I can get more menu ideas. So here we go again...

What did you eat/make last night for dinner?

What are you having tonight for dinner?

Last night we had white rice with stir fried beef strips, bell peppers, and onions.
Tonight we are having pork chops, roasted red potatoes, and steamed brocolli and cauliflower.

I am with you... it is so hard to think of what to make for dinner. Last night was lasagna, salad, squash and bread.Here are some others from this week...
roast, potatoes and carrots in the crockpot
taco salad (the kids usually do better with a burrito)
chicken fried rice
grilled chicken (marinate in equal parts of mango juice, olive oil, and lime juice with a little minced garlic and a little sugar and a pinch of salt)

Ok so last night Gabe and I had Taco Bell, and the kids had Jack In The Box.
A great menu plan when you are pregnant have certain cravings, you get home late, and don't feel like cleaning up.

Tonight I will make the kids some sort of frozen meal such as corn dogs, or chicken nuggets.I don't know what gabe will eat.

If I wasn't pregnant, I would make either a killer Lasagna, Spaghetti, or some sort of Italian dish.

Here is my favorite Lasagna dish from a recipe book that my Mom gave to me years ago. I usually make it year round once or twice a month. I cook healthier when I'm on my endo diet, but nobody eats the food. pluse I am not much of a cook. Except for Italian wwhich is very time consuming.

Spinach Lasagna

1 lb lean ground beef. (I use 2 lbs of natural ground Turkey Gabe can't eat beef or pork) tastes great.
2 jars of 15 oz spaghetti sauce. (I use two and a half jars)
1 can of 6 oz tomato paste ( I usually leave this one out, takes to much time)
1 can of 4 oz Mushroom stems and pieces drained
1/4 cup of chopped onion
I don't use these next 4 ingredients but some people have time for it
1/2 teaspoon of parsley flakes
1/2 teaspoon of dried oregano leaves crushed
1/2 teaspoon of dried basil leaves crushed
1/4 teaspoon of garlic powder
Seasoned salt and pepper to taste
Now for the yummy stuff that I'm supposed to stay away from
1 lbs of dry cured cottage cheese (I was never to sure what this was so I just use ricotta cheese)
3 cups of (12 oz) shredded mozzarella cheese divided (I buy one extra bag)
3 oz of grated Romano cheese(I just buy the shredded)
1 egg lightly beaten (I never use the egg and I don't know why)
1 pkge of 10 oz frozen chopped spinach thawed and squeezed dry
8 Oz of noodles, cooked, rinsed, drained, and dried on a towel
3 oz of sliced pepperoni (optional)
1/2 cup of grated parmesan cheese

cook beef in large skillet over med high heat until brown stirring to separate meat;
drain fat.Add spaghetti sauce, tomato paste, mushrooms, onions, and seasonings.
bring to a boil stirring constantly, set aside.

Combine cottage cheese,1 cup of the mozzarella cheese, Romano cheese, egg and spinach in medium bowl.

Spoon 1 1/2 cups of meat sauce in bottom do 13 x 9 inch pan. Place noodles over sauce, then half of the cheese mixture and pepperoni ( I just save all the cheese mixture for the top but I use my own extra mozzarella and the Ramono in the middle instead). repeat layers, Put cheese mixture on top sprinkle with remaining mozzarella. Bake in pre heated oven at 350 for 30 to 45 min until bubbly. Clean up your messy kitchen. When its done let stand for 10 min. (I usually let it stand for half an hour. Makes 8 to 10 servings and is very time consuming, until you get used to it.

We made Beef Stew, crockpot style tonight. It lacked some salt, but was an easy fix. Let me know if you want the recipe- I can redirect you. So fun to run into you here!
